From Lizz: Years ago, a dear friend of mine, Lisa, introduced me to compound butter. We were celebrating my husband’s birthday and she was helping me with the menu which included corn on the cob. She let me know she would bring the butter. I thought to myself, I have so much butter but if that’s what she wants to bring then, okay fine, bring butter.
Now, I should have realized at the time that Lisa, who is Italian and is an AMAZING cook, would never just bring plain butter, but honestly, I had no idea that compound butter was even a thing. I mean, it made complete sense to me after I experienced this buttery goodness, that you could take a simple thing like butter and add herbs and seasonings to it, but I had no idea how delicious it would be.
Fast forward to Cook Like a Greek, my herb garden with all my essential Greek herbs and my absolute love for fresh, sweet corn on the cob! I decided to take some of the fresh Greek oregano from my herb garden, some finely chopped garlic, a bit of sweet paprika and combined it with some softened butter. The results were simply mouthwatering!
We slathered it on our corn on the cob, made an herb garlic bread and dabbed it onto a grilled steak. You get it…basically, anywhere you would normally use butter. Try it. We promise, you will love it!

HOW TO MAKE COMPOUND BUTTER WITH GARLIC AND GREEK OREGANO
- Soften one 1, 8 oz cube of unsalted butter. Wash fresh Greek oregano, dry well with paper towels and finely chop 2 tablespoons. Finely chop 2 teaspoons of fresh garlic (we use Christopher Ranch!)
- Once butter has softened, add all ingredients into a mixing bowl. Combine well to incorporate all ingredients. Scoop the herb butter mixture into a small serving bowl and refrigerate until ready to serve. Alternatively, you can scoop the her butter onto a piece of waxed paper and shape into a small log by folding the waxed paper around the butter, and refrigerate until ready to serve.
HOW LONG WILL THE COMPOUND HERB BUTTER LAST IN THE REFRIGERATOR?
This recipe includes fresh Greek oregano, so we recommend keeping the butter for up to one week. You could also use dried Greek oregano and that would will last in the refrigerator for up to 2 months. Be sure to cover it!
CAN I FREEZE THE COMPOUND HERB BUTTER?
Scoop the herb butter onto a piece of parchment paper and shape into a small log by folding the parchment paper around the butter. You can store it in the refrigerator like this or place it in a small freezer bag and put it in the freezer for up to 6 months.
