This is the easiest meal you’ll make all week! Fithe is a Tomato Chicken Noodle Soup that has been in our family for generations.

Fithe - Easy Tomato Chicken Noodle Soup

From Lizz: When I first started dating my husband Mark, he would often cook dinner for me. One of my favorite meals he would make was a very easy and lite, yet filling, soup called Fithe. It was a soup his mother made for him growing up with four very simple ingredients that include tomato sauce, chicken broth, fithe noodles (my favorite part of the soup!), and lemon juice.

Over the years, this soup has become an easy go to meal for our family and one of our favorite soups. We always have the ingredients available in our pantry. It’s especially good when you are a bit under the weather and need something lite and soothing to tide you over.

Fithe noodles are very fine noodles from Greece and not easily found in the regular supermarkets. They can be found at an international store if you have one available to you, or can also be purchased from Amazon here. Alternatively, you can use angel hair pasta.

HOW TO MAKE FIDE

  1. The star of this soup are Fithes. Fithes are very fine noodles and are very nice to use in soups. They come in little round balls that you can break apart as you add them to the soup mixture. Fithe noodles can be found at any international store or can also be purchased online from Amazon.

  2. Measure and prepare all ingredients.

  3. In this order, add tomato sauce and then chicken broth to a large sauce pan and stir together well. Bring to a low boil over medium heat.

  4. Break the fithe balls into small pieces over the sauce pan and add to the tomato sauce and chicken broth mixture. Allow the fithe noodles to cook for 7-10 minutes. Once the fithe noodles are cooked, add lemon juice to the soup mixture and stir to incorporate well.

  5. Serve hot with grated mizithra or parmesan cheese. Enjoy!

What else can I use if I can’t find fithe noodles?

You can use angel hair pasta or you can even use orzo pasta in place of the fithe noodles. Take caution on your measurements of the orzo because you can otherwise end up with a very thick soup.

  • 30 oz tomato sauce two 15 oz cans or one 30 oz can
  • 32 oz chicken broth one box free range organic
  • 4 fithe balls
  • 4 tbsp lemon juice from two lemons, plus more to taste optional
  • grated mizithra or parmesan for garnish optional

Instructions

  • In this order, add tomato sauce and chicken broth to a large sauce pan and stir together well. Bring to a low boil over medium heat.
  • Break the fithe balls into small pieces over the sauce pan and add to the tomato sauce and chicken broth mixture. Allow the fithe noodles to cook for 7-10 minutes.
  • Once the fithe noodles are cooked, add lemon juice to the soup mixture and stir to incorporate well.
  • Serve hot with grated mizithra or parmesan cheese. Enjoy!
