When we think of fresh and satisfying salads, this Grilled Shrimp Salad with Feta Vinaigrette comes right to mind! We can’t wait for you to taste!

From Lizz: We were supposed to be in Crete, Greece right now. That’s what I’ve been thinking a lot about this past week. For the first time, in a very long time, I was supposed to spend 3 entire weeks in Crete with my family, including my parents, and COVID-19 changed our plans. My father was so looking forward to spending time with his sisters and cousins. At 87 years old, these times are even more precious to him and to me because spending time with him where he grew up is like taking a walk through history. The stories he tells as he reminisces are gifts that I do my very best to take in and appreciate. As they say in Greek, “tou chronou” or next year…

It’s important to me to recreate as many memorable dishes as possible, so that I can at least feel like we have not completely lost out. Let’s face the fact that it is not the same as being there, but as long as my family can still be together and enjoy good food, I’m happy.

A satisfying and lite Greek meal that we enjoy during the hot summer months, whether we are in Greece or home in the United States, is grilled shrimp or “Garides” accompanied by a Greek salad. I played with this particular dressing for a bit and the results turned out pretty fantastic. The feta is, of course, the game changer in this dressing! Adjust how much salt you use depending on how salty your feta is.

With the shrimp, my family likes a little heat so I added the red pepper flakes to the Shrimp marinade. This can also be adjusted depending on your preference on spicy vs. non-spicy.

HOW TO MAKE GRILLED SHRIMP SALAD WITH FETA VINAIGRETTE

  1. Prepare ingredients for Shrimp Marinade.
  2. Add all ingredients for Shrimp Marinade into a mixing bowl and whisk together well.
  3. Wash shrimp and pat dry. Add Shrimp to mixing bowl with marinade and mix well with hands to cover shrimp well with marinade. Cover with plastic wrap and put in fridge for at least 30 minutes.
  4. While Shrimp are marinating prepare salad. Wash and dry all vegetables. Chop romaine lettuce. Cut up cucumber, dice red bell pepper, slice red onion, wash cherry tomatoes. Add all ingredients plus Kalamata olives to a large salad bowl.
  5. Prepare Feta Vinaigrette by adding all ingredients, except feta, into a mixing bowl and whisk together well.
  6. Add crumbled feta to dressing and whisk well. Pour over salad and gently toss to incorporate Feta Vinaigrette into salad ingredients.
  7. Remove Shrimp from refrigerator and skewer 3-4 shrimp onto pre-soaked bamoo skewers.
  8. Grill shrimp on open grill or on grill pan for at 2-3 minutes on each side.
  9. Shrimp should turn opaque in color when done. Serve with the salad.


WHAT’S THE SHORTEST AMOUNT OF TIME I NEED TO MARINATE THE SHRIMP?

Marinate the shrimp for a minimum of 30 minutes. Of course, like with anything else, the longer you marinate them, the tastier they will be!

HOW DO I KNOW WHEN THE SHRIMP IS COOKED?

The shrimp will turn opaque with some pink and bright red accents when cooked. Make sure not to overcook them, as they will become chewy and dry.

  • Le Creuset Oval Grill Pan
  • Wooden Skewers

Ingredients

  • 1 1/2 lbs large shrimp, peeled and deveined about 20 large shrimp
  • 2 hearts romaine chopped
  • 8 oz cherry tomatoes
  • 1 English cucumber sliced and quartered
  • 1/2 small red onion halved and finely sliced
  • 1 small red bell pepper diced
  • 1/3 cup pitted Kalamata olives

Shrimp Marinade

  • 2 tbsp extra virgin olive oil
  • 2 tbsp lemon juice freshly squeezed
  • zest of 1 lemon
  • 1 tbsp fresh parsley finely chopped
  • 1 tsp minced garlic we use Christopher Ranch jarred minced garlic
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper freshly ground
  • 1/4 tsp crushed red pepper flakes

Feta Vinaigrette

  • 1/4 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp minced garlic we use Christopher Ranch jarred minced garlic
  • 1/2 tsp Greek oregano
  • 1/4 tsp black pepper freshly ground
  • sea salt to taste will vary depending on saltiness of feta you use
  • 4 oz feta cheese crumbled

Instructions

  • Measure all ingredients for Shrimp Marinade.
  • Add all Shrimp Marinade ingredients to a mixing bowl and whisk together.
  • Wash shrimp and pat dry. Add Shrimp to mixing bowl with marinade and mix well with hands to cover shrimp well with marinade. Cover with plastic wrap and put in fridge for at least 30 minutes.
  • While Shrimp are marinating prepare salad. Wash and dry all vegetables. Chop romaine lettuce. Cut up cucumber, dice red bell pepper, slice red onion, wash cherry tomatoes. Add all ingredients plus Kalamata olives to a large salad bowl.
  • Prepare Feta Vinaigrette by adding all ingredients, except feta into a mixing bowl and whisk together well. Set aside.
  • After at least 30 minutes, remove Shrimp from refrigerator and skewer 3-4 shrimp onto pre-soaked bamoo skewers.
  • Grill shrimp on open grill or on grill pan for at 2-3 minutes on each side. Shrimp should turn opaque in color when done.
  • Pour dressing over salad and toss gently to cover all ingredients with Feta Vinaigrette. Serve salad with Grilled Shrimp.
