Oven Baked Feta - Feta Sto Fourno

From Lizz: Our Oven Baked Feta – Feta Sto Fourno, is my version of a traditional Cretan appetizer. The traditional version is simpler as you place the feta slices on the bottom of a baking dish and layer slices of green bell pepper and sliced tomato then top off with extra virgin olive oil and Greek oregano.

In my version, I saute the diced green and yellow bell pepper, cut up cherry tomatoes and capers seasoned in extra virgin olive oil with Greek oregano, sea salt and fresh ground black pepper. Once the seasoned vegetables have been sauteed, I top the vegetables with layers of feta, and drizzle a little more extra virgin olive oil, Greek oregano and fresh ground black pepper. It is then baked in the oven for a few minutes so that the cheese can melt and brown up a bit.

We serve this appetizer with Garlic Crostini, which are also very easy to make. It’s simple, quick and your family and friends will love it as an appetizer or a side dish.

HOW TO MAKE OVEN BAKED FETA – FETA STO FOURNO

  1. Prepare crostini to serve with the Oven Baked Feta. Slice 12-18 1/2 inch slices from the baguette and place on a foil lined sheet pan. Drizzle olive oil over each slice of bread. Spread a small amount of finely minced fresh garlic on each slice of bread. Place in a 375 degree F oven for 7-10 minutes or until golden brown.
  2. Prepare and measure ingredients and dried spices. Turn oven on to 375 degrees F.
  3. Add extra virgin olive oil to a shallow, oven proof saute pan and heat under medium heat. Add green and yellow bellow peppers, sliced cherry tomatoes, capers, Greek oregano, sea salt and fresh ground pepper.
  4. Stir all ingredients together and saute for 3-5 minutes.
  5. Layer sliced feta on top of sauteed vegetables. Drizzle 1 tablespoon of extra virgin olive oil on top of feta and sprinkle some dried Greek oregano and fresh ground black pepper on top. Place into the preheated 375 degree F oven for 15-20 minutes or until the cheese is slightly melted and brown. Serve warm out of the oven with Garlic Crostini.

Ingredients

  • 12 oz Feta, cut into 6 equal slices
  • 1 diced green bell pepper, small
  • 1 diced yellow bell pepper, small
  • 2 cups cherry tomatoes, cut in half
  • 1/8 cup capers
  • 1/2 tsp dried Greek oregano plus more to sprinkle on top of feta
  • 1/4 tsp sea salt
  • 1/4 tsp fresh ground black pepper plus more to sprinkle on top of feta

Garlic Crostini

  • 1/2 baguette loaf
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic, finely minced

Instructions
