Grilled Watermelon with Honey Balsamic Sauce

Ingredients

  • 1 medium watermelon sliced into 1 1/2 inch wedges
  • 1 cup blueberries
  • 1/4 cup crumbled feta cheese
  • 2 tbsp fresh mint

Honey Balsamic Reduction

  • 1/2 cup balsamic vinegar
  • 1/4 cup honey

Instructions

  • Combine balsamic vinegar and honey in a small sauce pan and simmer until the mixture is thickened and reduced by about half. Set aside to cool.
  • Place watermelon wedges onto a hot grill for 2 minutes. Turn and grill for 2 more minutes. Remove from grill and arrange on a serving platter.
  • Drizzle grilled watermelon with Honey Balsamic Sauce. Top with fresh blueberries, fresh mint leaves, crumbled feta and additional Honey Balsamic Sauce if desired.
