Prepare crostini to serve with the Oven Baked Feta. Slice 12-18 1/2 inch slices from the baguette and place on a foil lined sheet pan. Drizzle olive oil over each slice of bread. Spread a small amount of finely minced fresh garlic on each slice of bread. Place in a 375 degree F oven for 10 minutes or until golden brown.
Prepare and measure ingredients and dried spices. Turn oven on to 375 degrees F.
Add extra virgin olive oil to a shallow, oven proof saute pan and heat under medium heat. Add green and yellow bellow peppers, sliced cherry tomatoes, capers, Greek oregano, sea salt and fresh ground pepper.
Stir all ingredients together and saute for 3-5 minutes.
Layer sliced feta on top of sauteed vegetables. Drizzle 1 tablespoon of extra virgin olive oil on top of feta and sprinkle some Greek oregano, sea salt and fresh ground black pepper on top. Place into a preheated 375 degree F oven for 15-20 minutes or until the cheese is slightly melted and brown.
Serve this dish warm out of the oven with the Garlic Crostini.
