Ingredients

  • 16 oz container hummus
  • 12 oz container tzatziki
  • 1 1/2 cups Persian cucumber finely chopped
  • 1 cup vine ripened tomato seeded and finely chopped
  • 1/2 cup green bell pepper finely chopped
  • 1/3 cup pitted Kalamata olives finely chopped
  • 1/4 cup red onion finely chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh squeezed lemon juice
  • 1 tsp Greek oregano
  • salt and freshly ground pepper to taste
  • 2 oz feta cheese crumbled

Instructions

  • Prepare and measure all ingredients.
  • Make a Greek salad salsa by adding, chopped cucumber, tomato, green bell pepper, Kalamata olives, red onion, Greek oregano, salt and pepper to taste, extra virgin olive oil and fresh lemon juice to a bowl and combine well. Set aside.
  • In a 9x9 size deep dish, spread hummus evenly as your first layer of the dip.
  • Next, spread tzatziki sauce evenly on top of hummus, leaving about 1/4 to 1/2 inch of the hummus visible.
  • Use a slotted spoon to drain any excess dressing from the Greek salad salsa and begin to spoon the Greek salad salsa evenly over the tzatziki. Be sure to drain it well through the slotted spoon so that the final dip doesn't get watery.
  • Crumble feta evenly over the Greek salad salsa. Sprinkle some additional freshly ground black pepper over the top. Enjoy with pita chips.
