Keftedes - Greek Meatballs

Ingredients

  • 2 pounds ground beef
  • 1 1/2 cups ciabatta bread day old
  • 1 onion medium
  • 2 eggs
  • 1 tsp mint dried
  • 3 tbsp fresh parsley
  • 1 tsp oregano dried
  • 2 tsp lemon juice
  • 1/2 tsp sea salt
  • 1/4 tsp pepper ground
  • 1/4 inch olive oil for frying
  • flour for dredging

Instructions

  • Cut bread into cubes, and add enough water for the bread to soak it up.
  • Once the bread has soaked up the water, squeeze out the excess.
  • Chop onion, and prepare your other ingredients.
  • Add the ground beef, bread, onion, eggs, lemon juice, herbs and spices to a bowl, and combine together thoroughly.
  • Once combined, form equally sized meatballs and set aside.
  • Dredge each meatball in flower and shake off the excess.
  • Heat olive oil in a pan over medium heat. Once the olive oil has heated thoroughly, carefully place the keftedes in the hot oil. Cover and cook for 3-4 minutes. Remove cover and turn keftedes over. Cover again to cook for another 3-4 minutes. You will likely need to do two batches.
  • Once keftedes are done cooking, place them on a paper towel covered plate to soak up the excess oil.
  • Enjoy with some Tzatiziki!
