There are so many fresh summer vegetables to choose from this time of year! Our Zucchini with Olive Oil & Lemon Dressing – Kolokithia is a simple way to enjoy fresh zucchini this summer.

From Lizz: One of the simplest ways to serve fresh vegetables is to steam or boil them. I always enjoy having vegetables this way because I can decide how to season them. Most of the time it’s with a simple Ladolemono sauce.

Zucchini with Olive Oil & Lemon Dressing is a great side dish to enjoy with any grilled seafood or meat. I remember my mother often serving the Zucchini with freshly picked and boiled dandelion greens and Ladolemono. This combination can be served instead of a traditional green salad.

HOW TO MAKE ZUCCHINI WITH OLIVE OIL & LEMON DRESSING

  1. Cut ends off zucchini off. Rinse well under running water.
  2. Boil or steam zucchini in lightly salted water for about 15 minutes.

  3. Remove from water and place on a serving dish. Spoon Ladolemono over zucchini and serve.

HOW LONG WILL THIS LAST IN THE FRIDGE?

Zucchini lasts up to 2 days in the fridge, when stored properly in a covered container.

WHY DO YOU ADD SALT TO YOUR WATER?

Salt actually speeds up the boiling process! And it adds a little extra flavor to the zucchini.
