TOMATO SAUCE

From Lizz: Have you been searching for a flavorful, but easy, tomato sauce you can make ahead of time and use during the week to pour over pasta or rice? How about a tomato sauce that you can use as a base with vegetables for a quick side dish? Maybe a tomato sauce you can cook Greek style meatballs in to serve as a main dish? Well, look no further! This Greek Tomato Sauce is all that and more!

This is my mother’s signature tomato sauce that our family grew up with. To make it easy for you, we created our Mykonos Blend – Tomato Sauce Seasoning.  It’s flavored with all the herbs and spices my mother uses that include Greek oregano, cinnamon, and allspice that give our sauce those signature Greek flavors.  Like many great home cooks, my mother never measures anything.  It’s always, “a little of this and a little of that”.  We’ve taken the guess work out for you by creating this special blend and, we’ve made my mama proud!

WHAT TYPE OF CANNED TOMATOES DO YOU USE FOR THIS SAUCE?

We love San Marzano canned tomatoes from Italy!  The flavors of San Marzano tomatoes are prized for their balanced flavor.  Sweet, pulpy, low in acidity, and contain few seeds.  They are perfect for making sauces!

CAN I USE FRESH TOMATOES TO MAKE THE GREEK TOMATO SAUCE?

You can use very ripe tomatoes, coarsely chopped, instead of canned tomatoes. If you decide to use fresh tomatoes, add an 8 oz can of tomato sauce as well.

WHAT IF I LIKE MY SAUCE THINNER?

Add up to 1/2 cup of water to the sauce while it is cooking to thin it out.
