Easy Roast Chicken Recipe

We love a Sunday family dinner with all the trimmings to celebrate the end of a restful weekend and the beginning of a busy week ahead. One of our favorite, and frankly easy, meals to cook is a roasted chicken. While most of the time, we roast our chicken beginning to end in the oven, this recipe takes advantage of the chicken cooked as part of our Homemade Chicken Broth.

Once the broth is done, we remove the chicken and roast it to a golden brown. What is extra nice about preparing the chicken this way, is that the meat literally falls off the bones and is incredibly moist. You can save the chicken broth, which will keep 3-4 days in the refrigerator, and use it during the week as a base for soup or freeze the broth for up to 3 months for a later use.

To round off your Sunday Family feast serve the roasted chicken with our Greek Roasted Lemon Potatoes or our Cretan Style Pilafi.

HOW TO MAKE OUR EASY ROAST CHICKEN RECIPE

  1. Begin by following the recipe for our Homemade Chicken Broth.
  2. Once the chicken broth is done, you have a nicely cooked chicken. We like to take an extra step and roast the chicken in the oven for a bit so that the skin becomes golden brown. Using two large cooking spoons, very carefully place the spoons under the chicken on opposite ends of each other and lift the chicken out of the pot and place into a roasting pan, breast side down. Remove the carrots, celery and onion from the pot and place around the chicken. Pour some extra virgin olive oil over the chicken. Rub 1 teaspoon (about 1 large clove) of finely minced garlic over the chicken. Sprinkle with dried Greek oregano, salt and pepper to taste. Finally, pour 3/4 cup of the chicken broth into the bottom of the roasting pan.
  3. Roast chicken and vegetables in oven for 30 minutes, basting once after 15 minutes.
  4. Remove from the oven and place on a serving platter with vegetables. Serve with our Greek Roasted Lemon Potatoes or our Cretan Style Pilafi.

  • 1/4 cup extra virgin olive oil
  • 1 tsp finely minced garlic about one large clove
  • 1 tbsp Greek oregano
  • salt and pepper to taste

Using two large cooking spoons, very carefully place the spoons under the chicken on opposite ends of each other and lift the chicken out of the pot and place into a roasting pan, breast side down. Remove the carrots, celery and onion from the pot and place around the chicken in the roasting pan.
