Homemade Chicken Broth Recipe
Instructions
Begin by following the recipe for our Homemade Chicken Broth.
Once the chicken broth is done, you have a nicely cooked chicken. We like to take an extra step and roast the chicken in the oven for a bit so that the skin becomes golden brown. Preheat your oven to 400° F. Using two large cooking spoons, very carefully place the spoons under the chicken on opposite ends of each other and lift the chicken out of the pot and place into a roasting pan, breast side down. Remove the carrots, celery and onion from the pot and place around the chicken in the roasting pan.
Pour 1/4 cup extra virgin olive oil over the chicken. Rub 1 teaspoon (about 1 large clove) of finely minced garlic over the chicken. Sprinkle with 1 tbsp Greek oregano, salt and pepper to taste. Finally, pour 3/4 cup of the chicken broth into the bottom of the roasting pan.
Roast chicken and vegetables in oven for 30 minutes, basting once after 15 minutes.
Remove from the oven and place on a serving platter with vegetables. Serve with our Greek Roasted Lemon Potatoes or our Cretan Style Pilafi.
